Connoisseur's Chardonnay/ Semillon - 20/05/09

Went to the brew shop - again! Although I have made the Young's Chardonnay (7 day kit) twice, and find it quite palatable, I thought I would like to try a couple more white wine kits before I embark on my first 30 bottle brewing session.



I chose one of the Connisseur's range because there was more choice of grape varieties and also the shop had quite a few 6 bottle kits so I will be able to sample lots of different ones. I chose the Chardonnay/ Semillon because it is the type of wine that my husband and I like to drink. This kit is not a 7-dayer as it should take a month. I am hoping that this kit will give a better flavour then the Young's express kit.



I made the first stage of the kit up quite quickly and it seems pretty straightforward. The only tricky part was getting the Bentonite (helps yeast activity and removes proteins) to dissolve.

My wine should be at 'day 8' stage however when testing the Specific Gravity with the hydrometer the wine read .992 so it is actually at the 'day 20' stage i.e it has completed the fermentation process. I think this is probably because the room I have had the wine in was really warm. I have now added the Potassium Metabisulphite (used to prevent oxidation and improve shelf life).

Spoke to a very helpful lady in a brew shop who confirmed that the fermentation had completed quickly was due to the temperature of the room. The hot weather is maming it difficult to control the room temperature so I have moved my demi johns to a cooler room. Apparently the quick fermentation is likely to effect the bouquet of the wine.
